Simple Ingredients And Less Than 30 Minutes To Cook!

This week while me and my daughter were getting a few things from the grocery store for the week, she requested Chinese food. She said she wanted the noddles with chicken and veggies. She wanted us to order out, but I figure we were there at the store, why not create my own. So that is just what I did. And guess what, it took less time to cook than it would have been to order take out and get it delivered!

The whole family loved it, so I have to share!

INGREDIENTS

  • 4 oz of spaghetti pasta, angel hair or I use gluten free pasta

  • 1/4 cup reduced-sodium soy sauce (or gluten free option)

  • 2 tbsp hoisin sauce

  • 2 tbsp rice vinegar

  • 2 tsp cornstarch

  • 1 tsp grated ginger root (fresh is best)

  • 1 tbsp mince garlic

  • 1 lb chicken breast, cut into strips (you can buy already sliced at the store)

  • 1 tbsp sunflower oil (or any oil)

  • 1 tbsp sesame oil (if you don’t have this, you can always use another kind of oil)

  • 3 green onions, chopped (separate green parts from white parts – you’ll use both separately)

  • 2–3 cups of cut or chopped vegetables like carrots, red peppers, cabbage, bok choy, mushrooms, or broccoli

DIRECTIONS

  1. Cook the pasta according to the packages directions. As that cooks, combine the soy sauce, hoisin sauce, rice vinegar, cornstarch, garlic and ginger in a small bowl and set aside.

  2. Place 1 tbsp of oil in a large skillet, stir-frying chicken for about 5-8 minutes or until the chicken is no longer pink on medium heat. Removed with a slotted spoon. Drain the pasta and set aside when done

  3. On medium heat, place the sesame oil in the same skillet you cooked the chicken. Add the white part of the green onions and chopped vegetables to the pan. Stir fry consistently until tender, so nothing sticks to the bottom of the pan, approximately 5 minutes.

  4. When ready, add the cooked noodles and about half of the sauce from your small bowl – toss around to mix. Add more sauce if needed.

  5. Top with the remaining green onions and serve!
